Ingredient for 6 muffins
150 gr (1.5 dl) of cottage cheese (you can use plain yogurt if you do not have cottage cheese)
25 gr (0.25 dl) of vegetable oil for dough
2 eggs
75 gr of small diced ham
half diced paprika
half diced onion
1 tsp of vegetable oil for frying
50 gr of shredded cheese
90 gr of all-purpose flour
90 gr of whole wheat flour
1 tsp of baking powder
a pinch of salt
Some sunflower seeds for topping
How to make
- Preheat oven to 200 C. Prepare muffin tray with muffin paper cup.
- Fry paprika and onion with a teaspoon vegetable oil and add diced ham at the end. Set aside.
- Drain out water from cottage cheese if have and use a fork to spread over cottage cheese to make it easy to whisk.
- Whisk cottage cheese, eggs and vegetable oil until smooth.
- Add both flour, baking powder and salt and continue whisking.
- This recipe will give you a soft dough, not batter.
- Add the fried ham,onion paprika and shredded cheese.
- Gently use a fork to combine all mixtures.
- Use a tablespoon to scoop each muffin into the baking form. Decorate on top with sunflower seeds.
- Bake for 20 minutes and enjoy!
