Breakfast Ham & Cheese Muffin


Ingredient for 6 muffins
150 gr (1.5 dl) of cottage cheese (you can use plain yogurt if you do not have cottage cheese)
25 gr (0.25 dl) of vegetable oil for dough
2 eggs
75 gr of small diced ham
half diced paprika
half diced onion
1 tsp of vegetable oil for frying
50 gr of shredded cheese
90 gr of all-purpose flour
90 gr of whole wheat flour
1 tsp of baking powder
a pinch of salt
Some sunflower seeds for topping

How to make

  1. Preheat oven to 200 C. Prepare muffin tray with muffin paper cup.
  2. Fry paprika and onion with a teaspoon vegetable oil and add diced ham at the end. Set aside.
  3. Drain out water from cottage cheese if have and use a fork to spread over cottage cheese to make it easy to whisk.
  4. Whisk cottage cheese, eggs and vegetable oil until smooth.
  5. Add both flour, baking powder and salt and continue whisking.
  6. This recipe will give you a soft dough, not batter.
  7. Add the fried ham,onion paprika and shredded cheese.
  8. Gently use a fork to combine all mixtures.
  9. Use a tablespoon to scoop each muffin into the baking form. Decorate on top with sunflower seeds.
  10. Bake for 20 minutes and enjoy!
