Carrot Thai Spicy Salad (Som-Tam-Carrot)

We originally use raw papaya and green bean but it is quite rare and 
expensive here to find papaya. So, carrot is the best option. 
We can also apply the same salad dressing for mixed fruits and corn too. 
This dish is quite diet meal I can recommend ;)

All favour in one taste!
 Ingredients for 1 person
2 sliced medium carrots                   
3 cherry tomatoes, cut in half                               
some sliced cucumber
20 gr of roasted cashew nut / coarse roasted almond
5 scampi, 3-minute-boiled in boiling water and dipped in cold water immediately (This makes scampi crispy and sweet)

Ingredients for Salad Dressing
 3 cloves garlic, peeled and pounded
1-2 pounded red chili / dried chili (optional, or depends on how spicy you like)
1 tbsp palm sugar/ sugar
2 tbsp fish sauce/ soya sauce
2 tbsp lime juice
1 tbsp dried shrimp (optional, I dropped this too)

How to make

1) Mix all ingredients of salad dressing in the a large bowl. Make sure that the sugar is dissolved.
2) Put carrots, tomatoes, cucumber in and gently stir to mix them with the dressing.
3) Place the salad on the dish and sprinkle with the roasted cashew nut or almond, and scampi on top
4) Time to enjoy for a happy and healthy meal!
